Trail Mix Oatmeal Cookies Recipe

Sometimes my posts are healthy and sometimes they are not. Today’s Trail Mix Oatmeal Cookies are a balance of both fiber and bunches of brown sugar hence what a cookie should be.

Oats and seeds and raisins. And a completely unnecessary, pretty doily.

Preheat 350F.

Trail Mix Oatmeal Cookies Ingredients

  • 1/2 cup (1 stick) butter
  • 1 1/4 cups brown sugar
  • 1 egg
  • 1/2 cup applesauce
  • 1/2 teaspoon vanilla
  • 3/4 cups flour
  • 1/2 cup whole wheat flour
  • 2 tablespoons ground flax seeds
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/4 cups oatmeal
  • 3/4 cup coconut
  • 1/2 cup millet (found in the natural or bulk section of your local grocery store)
  • 1/2 cup raisins

Cream together butter, sugar, and eggs. Add applesauce, vanilla, flour, wheat flour, flax seeds, baking soda, and salt. Mix just until combined. Remove bowl from mixer and hand stir in in oatmeal, coconut, millet, and raisins.

Finally, drop by large spoonfuls (or regular ice cream scoop) onto a baking sheet – about 8 per tray. Bake about 18 minutes.

Makes a couple dozen cookies – one dozen to share and one dozen to place in an unnecessary but adorable cookie jar for unnecessary but delicious, chewy, nutty, sweet snack.
