I am so proud of my kids. I’m proud of them because of who they have worked to become. While I’m also proud of their accomplishments, there are too many to list. Last night I received a typical call from Dotter getting ready to accomplish something again. It went something like this…
5:38pm call: “Hi, Mom. I’m at the grocery store…”
And, that’s when I know I need to put my chef hat on to answer cooking or baking questions. Dotter uses this same website like you do except, you know, she has the hotline number. This week she was making cupcakes for nurses. We got her all set and then the updates came…

Most noteworthy little boxes all dolled up. As a result, I’m beaming with pride.

If she’s anything like her momma, I’m guessing there was dancing and bouncing and clapping involved. We’re a little Tiggerish that way. As a result, perhaps one day she, too, will break her dotter’s bed while sharing good news. I love her.
Chocolate Cupcake Recipe Ingredients
- 2 cups sugar
- 2 1/4 cups flour
- 3/4 cup dark cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoon salt
- 2 eggs
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1/4 cup sour cream
- 2 teaspoons vanilla
- 1 cup very hot water
first of all, cream sugar & butter together. Mix in dry ingredients. Place eggs, buttermilk, vegetable oil, butter, & vanilla in a medium bowl and mix together well. Pour wet ingredients into the mixture while continuing to mix. Add hot water. Turn mixer off; and, in addition, use a rubber spatula to scrape ingredients from sides of bowl down into the batter. Mix some more until well combined. Set aside.
Scoop batter using an ice cream scoop or 1/3 measuring cup into cupcake liners placed in a muffin baking pan. Bake for about 20-25 minutes or until a fork poked in, consequently, comes out clean. Finally, allow cupcakes to cool completely.
Cream Cheese Frosting Ingredients
- 1 – 4 oz pkg cream cheese, room temperature
- 1 stick unsalted butter, room temperature
- 1 lb powdered sugar
- Sea salt to taste – this make a huge difference in the flavor
- Small amount of water, as much as needed
First of all, start the mixer on low until ingredients are combined then whip ingredients together. In addition, add a wee bit of water if needed.
You can use 1/2 batch or less of this fondant for decorations.

My kids… they make my heart so very happy. And their talents? Well, maybe that’s just the frosting on top.
