I often forget about peanut butter cookies… so plain, so ordinary. But, then I have a hot-out-of-the-oven peanut butter cookie again and oh the joy that fills my soul.
Makes 18 small cookies.
Preheat oven to 350°F.
- 1/2 cup sugar (plus more for stamping cookies)
- 1/2 cup brown sugar
- 3/4 cup peanut butter
- 1/4 cup unsalted butter
- 1 egg
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 teaspoon sea salt
- 1 1/4 cup flour
Cream sugar, brown sugar, and butter together. Add remaining ingredients and mix until combined.
Using small cookie scoop, place balls of dough on a baking sheet covered with parchment paper. Leave a few inches in between each dough ball.
Dip a fork in sugar and then stamp down on each cookie twice, making the shape of a cross.
Bake for about 10-12 minutes.
