Red Velvet Cupcakes With Cream Cheese Frosting Recipe

Have you ever eaten dessert first? If you try these lovelies, I’m pretty sure you will decide to do just that. They are as pretty as they are delicious. Let’s get started right away.

Cupcake Ingredients

  • 2 cups sugar
  • 1/4 cup unsalted butter, softened
  • 2 3/4 cups flour
  • 1/4 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 ounce red Wilton food coloring
  • 1 cup hot water

Cream sugar & butter together. Mix in dry ingredients. Place eggs, buttermilk, vegetable oil, & vanilla in a medium bowl and mix together well. Pour wet ingredients into mixture and continue to mix. Add hot water. Turn mixer off and use a rubber spatula to scrape ingredients from sides of bowl down into the batter. Mix some more until well combined. Set aside.

Scoop batter using an ice cream scoop into cupcake liners placed in a muffin baking pan.

Bake for about 20-25 minutes or until a fork poked in comes out clean.

Allow cupcakes to cool completely.

Frosting Ingredients

  • 8 ounces cream cheese, room temperature
  • 1 stick unsalted butter, (1/2 cup), room temperature
  • 3 cups confectioners’ sugar
  • 1 1/2 teaspoons sea salt

Cream together cream cheese and butter. Slowly mix in powdered sugar & salt.

This recipe will create about 18 lovely cupcakes for your event.
