Almond Raspberry Linzer Cookie Recipe

Some dear friends stopped by to surprise me with a little gift couple of months ago. I missed their visit so they left me a voicemail. Feeling loved, I called them right back and left a message in response. Then the holidays took over. Then I took a weekend road trip with my family. Then I went to Monster Truck Jam. And, it was cool. And noisy. And cool.

Then one of my friends came over the other day. We tried to figure out what had happened. And there it was. A gorgeous jar of jam was still sitting in a basket on my front porch. Frozen. Right where they had left it for me. Mystery solved. Just call me Nancy Drew.


I simply had to put the jam to use as soon as possible. And with that, I present thee with the Linzer cookie. Can you find the jam? I don’t mean to brag, but I can see it right away.


  • 1 cup (or 2 sticks) butter
  • 2/3 cup sugar
  • 1/4 cup almond paste, soft
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups flour
  • 3/4 teaspoon sea salt
  • 2/3 cup raspberry jelly
  • 1/2 cup powdered sugar

Preheat oven to 350F.

Mix butter and sugar until fluffy. Add almond paste (be sure it is fresh and soft). Lower mixer speed after the almond paste is incorporated then add egg, almond extract, and salt. Add flour small amounts at a time until all is mixed into the dough. When mixture comes together, use a little flour to roll out the dough. Roll out to about 1/8 inch thick and use a heart Linzer cutter to cut out an equal number of tops and bottoms cookies.

Place cookies on a baking sheet lined with parchment paper. Bake for about 10 minutes or until they turn golden around the edges.

After cookies cool, lightly sprinkle powdered sugar on the top halves of cookies. A mesh tea infuserfine mesh strainer or sifter all work great for this.

Place about 1/2 teaspoon of raspberry jelly on a bottom cookie.

Picking up a top cookie by the sides (as to not mess up the beautiful powdered sugar on top), line the top cookie up with the shape of the bottom cookie and place cookie top on the jelly of the bottom cookie. Repeat process until all cookies are sandwiched together.


You can use any jelly that will go well with almond flavors such as apricot, blueberry or cherry.
